Quick Meals: Dyana's Aji & BobAli's Slow Cooker Steak and Potatoes

This simple (and mostly hands-free) recipe is going to become one of those hardy winter night go-to's - It is easy, delicious, and oh-so-comforting!

This recipe is part of an incredible project that demonstrates what it looks like when local businesses band together. The COVID-19 pandemic brought about numerous challenges for local businesses, but it also paved the way for unique collaboration opportunities. Dyana's Aji & BobAli's Slow Cooker Steak and Potatoes

Introductions


The three companies involved in today's recipe are Dyana's Aji, BobAli Foods, and Forstbauer Farms!


Maureen and Parviz created BobAli Foods in 2012, and you can still find them at farmer's markets today. The name BobAli is a mashup of their fathers' names, respectively. BobAli specializes in the highest quality humus, tapenade, and pesto - their tapenade is a crucial feature of the recipe below! You can find the hummus and the rest of their yummy treats on their website here. You can also follow BobAli on their social media, @bobalifoods!


Mary and Hans founded Forstbauer Farm in 1977. It is is a Certified Organic Farm in Chilliwack British Columbia, farmed using Biodynamic Principals and Certified through the Biodynamic Society of British Columbia (Demeter) and BCARA. Forstbauer is not only an amazing farm, but has also been the place Mary and Hans have called home and raised 12 children in. You read that right, twelve! Now that we have introduced everyone let's get into the recipe!

Recipe(s)


Time Required


Prep: 5-10 Minutes Steak:

Brown meat in skillet: 5-10 Minutes Slow Cook: 4-6 Hours

Potatoes:

Boil Potatoes: 15-20 minutes or until you can easily poke through with a fork.

*For an extra cheesy experience - once the potatoes are ready you can add cheese on top and broil until golden brown.


Steak Total Time: 6 hours 20 Minutes Max

Potatoes' Total Time: 30 minutes

Ingredients

Steak:

  • 1/2 cup of Dyana's Aji (you can pick your Aji heat-level here)

  • 200 g (1 container) of BobAli Tomato & Balsamic Tapenade (you can find it here)

  • 3-4 lbs of Forstbauer Farms stewing beef

  • 2 TBSP of olive oil

  • 1 - 14 oz can of diced tomatoes

  • Salt to taste

  • Fresh ground pepper to taste

Potatoes:

  • 1/4 cup of Dyana's Aji (you can pick your Aji heat-level here)

  • 4 Large Forstbauer Farms Yukon potatoes

  • 1/2 cup of sour cream

  • 1 cup of grated cheese

Directions


Steak:


Step 1: Prep the beef

  • Season the beef with salt and pepper. Once seasoned, brown the beef in a skillet with olive oil (5-10 minutes),


Step 2: Time to slow cook

  • Add browned beef into the slow cooker. Add the diced tomatoes, Dyana's Aji, and BobAli Tapenade. Stir and set to cook for 4-6 hours.


Potatoes:


Step 1: Turn up the heat

  • Boil the potatoes for 15-20 minutes or until you can easily poke through with a fork.


Step 2: Mix it all up

  • Mash the potatoes and add the sour cream, cheese, and Dyana's Aji. *If you want to make it a bit creamier feel free to add a bit of milk!
